The pit being ready and the mescal gathered, the work of cooking commences. Just at daylight the old woman in charge takes her place at the rim of the pit and prays that the cooking may be successful and that the people may be in condition to partake of the food. In igniting the fuel the old-fashioned fire-sticks must be employed; to use matches would bring ill fortune. When the fuel in the pit becomes a blazing mass the women go to prepare breakfast, but are soon at work again gathering brush and grass to cover the mescal. Within four hours the fuel is entirely consumed and the red-hot stones have settled to the bottom of the pit. When it is certain that no fuel remains unburned, as even a small amount of smoke would spoil the quality of the mescal, the head-woman says, "It is good," and with great eagerness her followers begin to fill the pit. There is need for haste in throwing in and covering the mescal, as the steam must be confined to prevent the hot stones from scorching it. The covering consists of alternate layers of green brush, grass, dry leaves, and finally a layer of earth, about six inches in thickness. After forty-eight hours of steaming the seething mass is uncovered and each woman removes her portion.
Higher up in the scale of life we get many instances which show various stages in the same progressive development towards greater care for the safety and education of the young. Among the larger lizards, for example, a distinct advance may be traced between the comparatively uncivilized American alligator and his near ally, the much more cultivated African crocodile. On the banks of the Mississippi, the alligator lays a hundred eggs or thereabouts, which she deposits in a nest near the water's edge, and then covers them up with leaves and other decaying vegetable matter. The fermentation of these leaves produces heat and so does for the alligator's eggs what sitting does for those of hens and other birds: the mother deputes her maternal functions, so to speak, to a festering heap of decomposing plant-refuse. Nevertheless, she loiters about all the time, like Miriam round the ark which contained Moses, to see what happens; and when the eggs hatch out, she leads her little ones down to the river, and there makes alligators of them. This is a simple and relatively low stage in the nursery arrangements of the big lizards.
This does not in the least apply to groups of people who are genuinely and keenly interested in art of any kind, and form a congenial circle in which they discuss, frankly and enthusiastically, methods of work, the books, ideas, pictures, and music which interest them. That is quite a different thing, a real fortress of enthusiasm in the midst of Meshech and Kedar. What makes it base and morbid is the desire to exclude for the sake of exclusion; to indulge in solitary raptures, hoping to be overheard; to keep the tail of the eye upon the public; to attempt to mystify; and to trade upon the inquisitive instinct of human beings, the natural desire, that is, to know what is going on within any group that seems to have exciting business of its own.
